Harvest and Olive Oil Extraction
From mid-October to early December we experience some magic days on our estate “Hacienda Merrha”, the effort of a whole year “Talking to the Olive Tree” should result in the extraction of the treasured olive juice. We maintain strict control throughout the process, ensuring cleanliness, traceability and speed in our own facilities.
Here you have some ideas of the hard work we do during the “Harvest Time” looking for the highest quality in our Extra Virgin Olive Oil: early harvesting, milling in less than 2 hours after harvest, manual selection of the fruit before milling, continuous two-phase system, daily cleaning of the entire system, acclimatized cellar, inerted tanks … are just a part of a sustained effort and tirelessly pursuit of QUALITY.
